This Slow Cooker Chicken Enchilada Casserole recipe is simple and easy, and your kids will love it! Little prep time at all, and there is nothing better coming home to a meal thats good you did not have to slave over!

Slow Cooker Chicken Enchilada Casserole

INGREDIENTS:1.5 lbs. boneless skinless raw chicken breasts1 28 ounces can Red Enchilada Sauce (I use El Pato Brand)Add these ingredients at the end:10 corn tortillas (I used an entire 11.7-ounce bag)3 cups grated cheddar cheese (divided)1 3.8 ounces can black olives (divided)SLOW COOKER SIZE:6-quartINSTRUCTIONS:Put the chicken breasts and the enchilada sauce in your slow cooker.Cook on HIGH for 4 hours or LOW for 8 hours.Shred the chicken with 2 forks right in the slow cooker.Cut the tortillas into strips, add to chicken and sauce.Stir.Add 1 cup of cheese and half the olives into the sauce and chicken mixture.Stir again.Flatten the mixture slightly.Add the rest of the cheese and the olives on top.Cook on low for about 40 – 60 minutes longer.Top with sour cream (optional)

      2. Cook on HIGH for 4 hours or LOW for 8 hours.
      3. Shred the chicken with 2 forks right in the slow cooker.
      4. Cut the tortillas into strips, add to chicken and sauce.
      5. Stir.
      6. Add 1 cup of cheese and half the olives into the sauce and chicken mixture.
      7. Stir again.

      9. Add the rest of the cheese and the olives on top.

          2. De-bone the chicken thighs (I find scissors are the easiest to do this with). Cut or slice the chicken into chunks and drop them in the crockpot.
          3. 2. Add all the rest of the ingredients to the crockpot except for cream, cheese, and xanthan gum. Set crockpot on low for 6 hours (or high for 3 hours) and let cool completely.

          4. 3. Once everything is cooked, remove the chicken from the crockpot and shred using a fork.

          5. 4. Add cream, cheese, and xanthan gum to the crockpot. Using an immersion blender, emulsify all of the liquids together. This will help the soup from separating while you are eating.

          6. 5. Place the chicken back into the crockpot and stir together. Taste and season with extra salt, pepper, and hot sauce if you’d like.
