Crockpot Fire Roasted Red Pepper & Cheese Soup Ingredients:

 1 cup Heavy Cream
 2 cups Milk
 ¼ cup Flour
 3 cups Sharp Cheddar Cheese
 Salt and Pepper to taste

Crockpot Fire Roasted Red Pepper & Cheese Soup Directions:

Shred the Cheese, Add Milk, Heavy Cream, and cheese to the crockpot.

Make sure you buy red peppers in oil, we will use this oil to make a rue so we can get the red pepper flavor into our soup without the red color.

Use up the oil with equal parts of flour in a pan, while the crockpot melts the cheese and heats the milk mixture, using an immersion blender will make this soup smooth and is suggested.

Now with the rue we made when the mixture reaches 180 degrees and the cheese is blended into it, add the rue a bit at a time whisking it in. Turn the crockpot on high and keep repeating thai till the soup becomes thick.
